Simply cut the mango in half by slicing on both sides of the large pit. Score the flesh of each mango half both lengthwise and crosswise, being careful not to pierce the skin. Then take the mango piece and gently push on the skin side to turn the mango half "inside out". The individual pieces of mango are then very easy to eat and serve guests.
